After several months looking for a suitable location, a serene creekside setting drew our attention as a prime spot for a local brewery. Our thoughts were, “Imagine sitting here underneath the shade of the game lands listening to the creek babble past, drinking beer designed for a local like me.”

 

We built our local brewery with locals in mind.

FRESH BEER & FRESH AIR.

Add a babbling creek and it’s almost surreal.

Our thoughts were that a local brewery where you spend a lot of your time has to be very cool. We chose this location because it’s along the historic Big Sewickley Creek. We designed the building to be opened to the outside during the warmer months.

We developed the property and designed our building specifically to be a brewery and taproom. Our back yard is defined by the historic Big Sewickley Creek yielding an outdoor beer garden that is very tranquil and perfect for kicking back with old friends or new. Sit by a fire pit, blend in with the nature of the valley, relax, and let loose. We believe that the fresh outdoors can uplift the spirit.

Our brewery might be a little “off the beaten path,” but it’s very accessible with a large parking lot.

We are a dog-friendly establishment for well-behaved leash dogs, and expect people to stop by for a great beer with their family and canine companions. In fact, we have lead hooks at the bar and each table.

OUR BREWING PLANT WAS SPECIFICALLY DESIGNED TO BREW LAGER BEER BY TRADITIONAL METHODOLOGY.

Why would we want to do this? Small-scale brewing lends itself to simple brewing techniques. The single-infusion mash is ideal for simplicity. With the proper ingredients, it is a fool-proof way to brew. We have never taken the simple path – Where’s the fun in that? Instead, we choose to use time- and effort-intensive multi-step mashing. While not technically needed for the mash to work correctly, it adds something a little special and noticeable. Decoction is not needed, but we do it, anyway. We have tanks and tanks. Lager beer needs to be kept cold from the start of fermentation to the final sip.

 

CURRENTLY SERVING

SMOKEY JOE

Our signature brew, 22 years in the making. It’s an amber lager close to Vienna style, malt-forward, and lightly smoked. A personal favorite. 4.9% abv.

OCCASIONATOR

Here is our double bock. There is no mystery here. Huge malt presence from beginning to end. Just enough hops to counterbalance the bold maltiness. Slight heat on the finish from the abundant EtOH. Have an occasion to celebrate? This is your brew. 10% abv.

MRS. SPECK

Mrs. Speck was a fictitious old nag my mom invented for purposes of improving our behavior when we were very young. Maybe this brew will improve your behavior. This is a rye beer, called roggenbier in Bavaria, very similar to a hefeweizen but with a little extra oomf. 4.8% abv.

BO D’ARC

A rich, dark, complex malty brew with tan-colored foam, balancing bitterness using Saaz hops adding a touch of spice. The name comes from the use of Bohemian-style yeast for the fermentation, or maybe you’ve heard of the Osage Orange tree? 5.5% abv.

BIG CASINO

Here is our smoked wheat bock. The cherrywood that was used to smoke the malt was grown locally. This is a big smokey, slightly boozy, rich and fulfilling brew, coming in at 7.5% abv.

BERTHA’S BOCK

It’s been a minute since we’ve had a traditional bock on the menu. This one is made from an “old-style” recipe, about 50/50 Pilsner malt to Munich malt, plus a long maturation. Nicely malted, just enough hops to balance out the grain. It’ll warm you up at 6.5% abv.

BSCB PALE

An American classic, modeled after the original pilsner and adjusted by the Volstead Act of 1920. You’ll find a refreshing hop note about midway through the taste sensation. Certainly the most common brew consumed in the USA and possibly over all of our solar system. Simple flavors, clean and familiar. 5.1% abv

DARK MATTER

This style always surprises me. It’s dark but light, substantive but not heavy. Lots of dark malty flavor but not roasted. Neither sweet nor bitter. A beer full of contrasts, it’s a dark lager otherwise known as Schwarzbier,.5% abv.

BALTIC PORTER

Baltic Porter is back. The profile is loaded with dark flavors including licorice, raisin, dark stone fruits on a nice malty back bone. There is even a subtle smoke note due to the inclusion of oak-smoked Bamburger malt. Here is my interpretation of Bohemian Style Pilsner, the original Pilsner of Josef Groll. A big quaff coming in at 8.4% abv.

MR. BROWN

This is a Bavarian Dunkel. Expect flavors of pumpernickel bread and toasted bread crust. Full-bodied and without being rich, just enough hop presence to balance the maltiness. 5.1% abv.

AUGSBURG GOLD

Going for gold, my Bavarian-style Helles is liquid gold in a glass. This batch is made with Berke Malt, an old-fashion, long-adored barley variety. This brew is golden-hued, nicely malted, lightly hopped, eminently quaffable. 5% abv.

COSMIC PHILTER

This brew is dedicated in honor of Phil Lesh. It is a well-balanced altbier, emphasis on the malt of course, but with enough hop presence to go either way. The Dorian mode of brewing technique, if you will. 4.9% abv. Rock on Phil, R.I.P.

Unclosed tabs will be charged a 20% gratuity. No outside alcoholic beverages are permitted.

All along, our intention was never to sell beer all over the country. Rather, we simply want to open a local brewery making great beer for the local population to enjoy. We had the idea. We had the name. And, most important, we had the support of our family.
